Step 1

In a resealable plastic bag, mix together the jerk seasoning, oil, and all the citrus juices—lemon, lime, and orange. Lay the chicken breasts flat on your cutting board and carefully slice horizontally through the middle, stopping before you cut all the way through. Open the chicken like a book. Sprinkle the inside with the remaining jerk seasoning, then add the chicken to the bag with the marinade. Seal it up and pop it in the fridge for about an hour. Before you grill, take the chicken out and let it sit at room temperature for around 10 minutes. Preheat your gas grill to high, around 500°F, and lightly oil the grates. Grill the chicken for 4 to 5 minutes on each side, until it’s cooked through and the juices run clear. Serve it up warm and enjoy!

Cook's tip

- Marinate the chicken for at least 4 hours, or overnight if possible, to let the flavors fully develop.
- Preheat the grill well to get those nice grill marks and prevent sticking.
- Use a meat thermometer to ensure the chicken reaches 165°F for safe and juicy results.

Why you’ll love it

This dish combines bold, spicy flavors with a bright citrus zing that makes every bite exciting. The smoky char from the grill adds depth, while the marinade keeps the chicken juicy and tender. It’s a perfect balance of heat and freshness that’s hard to resist.

Serving ideas

Serve with a side of coconut rice or grilled vegetables to complement the spicy and citrusy notes. A fresh mango salsa or a simple green salad can add a refreshing contrast. Don’t forget a wedge of lime for an extra burst of citrus.

Storage & leftovers

Store leftover chicken in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven or on the grill to keep it moist. You can also freeze cooked chicken for up to 2 months; just thaw overnight before reheating.
