This gooey, melty sandwich is a cheese lover’s dream come true. With four different cheeses perfectly melted between crispy, buttery bread, it’s comfort food at its finest.
Start by mixing the butter and garlic together in a small bowl until they're nicely combined. Spread half of this buttery garlic mixture on one side of each slice of bread and set them aside for now.
Heat a tablespoon of oil in a large skillet over medium-low heat. Toss in the spinach and giardiniera, cooking until the spinach has wilted and everything is warmed through, about 3 to 5 minutes. Once done, transfer this mixture to a bowl and wipe out the skillet to keep things neat.
Next, place one slice of the bread in the skillet, buttered side down. On the other side of the skillet, warm up half a tablespoon of oil and add the mozzarella slices, letting them soften for a minute or two. Once softened, move the mozzarella onto the bread in the skillet. Layer on the provolone, Asiago, and Fontina cheeses one by one.
Add the spinach mixture and tomato slices to the skillet, adding a little more oil if needed, and cook until everything is heated through, about 2 to 3 minutes. Pile the spinach and tomatoes on top of the cheese, then top it all with the remaining slice of bread, buttered side facing up.
Cook the sandwich until the bread is golden brown and the cheese has melted, flipping carefully halfway through. This should take around 5 to 10 minutes. Once it’s nicely toasted and melty, it’s ready to enjoy!
- Use medium heat to ensure the bread toasts evenly without burning.
- Butter the outside of the bread generously for a golden, crispy crust.
- Press the sandwich gently while cooking to help the cheeses melt together smoothly.
This sandwich combines the rich flavors of four different cheeses, creating a perfect balance of creaminess and sharpness. It’s easy to make, comforting, and always hits the spot when you want something warm and cheesy.
Serve with a side of tomato soup or a fresh green salad to balance the richness. A few pickles or a light fruit chutney can also add a nice contrast to the cheesy flavors.
If you have leftovers, wrap the sandwich tightly in foil or plastic wrap and refrigerate for up to 2 days. Reheat in a skillet or toaster oven to keep the bread crispy and the cheese melted. Avoid microwaving to prevent sogginess.
