Step 1

Start by heating a tablespoon of olive oil and a bit of butter in a large oven-safe skillet over medium-high heat. While that’s warming up, season the chicken breasts with salt and pepper on both sides. When the skillet is hot, place the chicken skin-side down, making sure to leave some space between each piece so they cook evenly. Let them brown nicely, which should take about 6 minutes, then flip and cook the other side for another 6 minutes until both sides have a nice golden color. Once browned, take the chicken out and set it aside on a plate.

Step 2

Next, preheat your oven to 375°F (190°C). Add the remaining tablespoon of olive oil to the same skillet, then toss in the sliced apples and onion. Cook them for about 4 minutes, stirring now and then, until they start to soften. Sprinkle in the sage, rosemary, thyme, salt, poultry seasoning, and pepper, and give everything a good stir to mix those flavors.

Step 3

While the apples and onions are cooking, whisk together the chicken broth, cream, honey, and mustard in a small bowl. Pour this mixture into the skillet with the apples and onions, and use a wooden spoon to gently scrape up any tasty browned bits stuck to the bottom. Nestle the chicken breasts back into the skillet, tucking them among the apples and onions.

Step 4

Pop the skillet into the oven and bake until the chicken is cooked through and the juices run clear, about 30 minutes. To be sure, check that the internal temperature near the bone reaches 165°F (74°C). Once done, your cozy, autumn-inspired meal is ready to enjoy!

- Brown the chicken well before adding the apples to develop deeper flavors.
- Don’t overcrowd the pan; give the ingredients space to roast evenly.
